Home made Crescent Rolls

Most of the time I just buy Crescent Rolls or the Crescent Roll Dough and make them that way. Sometimes it would be nice to make these babies from scratch- probably less expensive too!

1 1/2 cups scalded milk
1/2 cup sugar
1/2 shortening
1 teaspoon of salt

Set aside to cool
Dissolve 2 tablespoons yeast in 1/2 cup of lukewarm water.
Add 2 eggs to the milk mixture, yeast and 6 cups of flour.
Refrigerate a couple of hours.
Roll into a circle and cut into 12 pieces of pie. Roll into crescent shapes.

Bake at 350 degrees for 8-10 minutes.

Cinnabon Cinnamon Rolls (Clone Recipe)

Ingredients:
1 cup warm milk (110 degrees F/45
degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

1 cup brown sugar, packed 2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

1 (3 ounce) package cream cheese,
softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Directions:
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving

Dinner Rolls

I decided to make dinner rolls today to go with the Turkey dinner I made. They were delicious! Try these!

DINNER ROLLS
3 c. warm milk
2 tbsp. sugar
3 tbsp. or 3 pkgs. yeast
3/4 c. Crisco
1 c. sugar
3 tsp. salt
2 eggs and 1 egg yolk
9 c. flour (approximately)
Combine 2 tablespoon sugar and yeast. Pour warm milk over sugar and yeast and let set for 5 to 10 minutes. Add 2 cups flour and beat well. Add other ingredients except flour and beat well. Add flour 1 cup at a time, beating well after each. Add flour only until you have a soft dough. Cover and let rise in warm place about 1 1/2 to 2 hours.
Shape into rolls and place on greased cookie sheet. Brush with butter and let rise until double. Bake at 350 degrees about 15 to 20 minutes until nicely browned. Makes about 8 dozen dinner rolls

Ree Drummond posts the best recipes and step by step instructions. She also blogs about her life on a ranch- she was a city girl who married a cowboy and they have 4 children.
